"Better For You" Turkey Burgers with Olives


If you're looking for a healthier, yet still tasty, alternative to beef burgers, give these a try.  They're made of lean ground turkey (93/7 blend) and are studded with chopped green olives and parsley.  The aromatic spice cumin provides a rich, warm flavor.  Best of all, these will fill you yet won't weigh you down like a regular, often very fatty, beef burger.  Serve with sides of your choice like potato chips, fries, or vegetables.

"Better For You" Turkey Burgers with Olives

1 lb. lean ground turkey (93/7 blend)
1/2 cup chopped green olives 
2 tbsp. finely chopped Italian flat-leaf parsley
1 tsp. cumin
1/2 tsp. ground black pepper

In a large bowl, blend all the ingredients together using your hands.  Divide the meat into three or four sections and form into patties.  Heat a large skillet or a griddle pan over medium heat and grill the burgers for 5 - 6 minutes per side.

Serve with lettuce, thick slices of tomato and condiments of your choice.  Toasting the rolls before serving is nice, but is optional.

NOTE:  If you don't particularly care for the flavor of cumin, you can try substituting other seasonings.  For an excellent garlic-seasoned burger, finely mince 4 - 6 cloves of garlic and sauté in 1 tbsp. of extra virgin olive oil until golden brown and fragrant.  Transfer to a plate lined with paper towels (to absorb the oil) and let the garlic cool.  Add the cooled garlic into the meat mixture and form into patties.  Also, do NOT be tempted to add any additional salt to this recipe - the olives provide all the necessary salt.
