Radiance Fruit Salad


Sweet, healthy and delicious!  This fruit salad is an excellent palate cleanser after a rich meal.  This photo was taken after a heavy spaghetti and meatball dinner.  This is just a base recipe - feel free to substitute different fruits if you wish.  

Radiance Fruit Salad

1/3 of a cantaloupe, cut in 3/4" chunks (about 2 cups)
16 oz. strawberries, quartered (about 3 cups)
5 kiwis, cut in 3/4" chunks (about 2 1/2 cups)

Dressing:

3 tbsp. honey
3 tbsp. fresh lime juice
1 tsp. lime zest
3 tbsp. finely chopped mint leaves

Place all of the fruit into a large bowl.  In a small bowl, whisk the honey, lime juice, zest and mint.  Right before serving, pour the dressing over the fruit and toss gently to combine.

Serves 4 - 6
